Chopped Italian Salad Of Your Dreams

Even if you are an adamant salad hater, I think this could be one you might actually fall in love with.

This salad is jam packed full of flavorful ingredients. (in a non remorseful, I should not have just eaten that kind of way)

Original recipe that I based this recipe off of is linked here. I did make a lot of little tweaks along the way, taking out and adding ingredients as I saw fit. Therefore, this is in no way a true Italian salad.

I also have zero clue on what the nutritional value is. What I DO know, is that it is insanely delicious, fun to make, fulfilling, and feels guilt free!

INGREDIANTS

I didn’t measure out any of these ingredients. I simply based the amounts off of how much felt right to my taste preferences.

  • romaine and spring mix (or whatever leaf fits your pallet)
  • sliced pepperoncini
  • green olives
  • english cucumber
  • red onion
  • roasted red bell peppers
  • quartered artichoke hearts
  • salami
  • prosciutto
  • mozzarella balls (honestly could go without)
  • shredded parmesan cheese
LEMON HERB DRESSING INGREDIANTS

The only edits I made to the vinaigrette was adding in onion power and more lemon than the OG recipe called for. Major perks to the creator of the dressing though. I have never been a fan of olive oil or vinegar on my salads.. the vinegar being a little too pungent and the oil being a little too bland. BUT this dressing is heavenly. So much more flavor than expected.

  • red wine vinegar 1/4 cup
  • olive oil 1/2 cup
  • dijon mustard 1 teaspoon
  • oregano 1 teaspoon
  • onion powder 1 teaspoon
  • minced garlic 1 clove or 1 tsp minced from the jar (I added a little splash of the garlic juice too)
  • lemon juice 1/2 a lemon squeezed
  • salt to taste
  • pepper to taste
ON THE SIDE

I am a die hard fan of the Cheesecake Factory multigrain bread.

Thankfully our home grocery store sells these bad boys by the bag. If yours doesn’t though, a french baguette, sour dough loaf, garlic bread, or even croutons would be a great carb addition if desired!

THE STEP BY STEP

  1. Preheat your oven and toss in your bread if you purchased some for the side.
  2. Cut and wash all veggies.
  3. Mix together the Lemon Herb Dressing ingredients.
  4. Assemble! We assembled our salads in our individual bowls first and then used a giant mixing bowl to combine everything. This helps when more than one person is eating the salad because we were able to use different ingredients and different amounts of ingredients to fit out taste buds desires.
